I would like to have a list of all my planned spending categories and amounts so I can use as a budget for each month. This would make it much easier to update

In Planned Spending currently, you can change the view to a List View:

Once set up, you Planned Spending will carry over into your Spending Plan for the next twelve months. You scroll through future months by clicking on the forward arrow next to the month/year in the Spending Plan title bar. If needed, you can edit individual Planned Spending categories for future months which will affect only that month's amount.
