"Potentially Recurring" section on dashboards shows me countless one time payments as potential series.

Meanwhile my employer name changed 1+ year ago and the existing series never ended but nothing was assigned to it while new paychecks have not created new series and don't even show up in potentially recurring.

It's also not possible to bulk assign transactions to series making it even more painful

If I understand correctly, the statement name on your paycheck deposit changed a year ago and, as a result, the paychecks quit linking to the paycheck recurring series. That has been happening for a year or so, so now you have maybe 12 paycheck deposits that are not linked to the paycheck series.

In that situation, I would do two things:

(1) Link the existing unlinked transactions one at a time to the existing series using the 3-dot menu on the transaction row. It would be nice if you could do this in bulk, but you can't. I've had to do this before and it takes about 10 seconds per transaction.

(2) Edit the existing series and rename it to match the new employer statement name. Also update the amount if necessary. And check the Frequency and Occurrence settings to make sure that the next due date matches your upcoming paycheck. Checking Preview Next Occurrence is the best way to make sure all is corrrect.

That should set you up so that future paychecks link correctly. But only time will tell.
