Can you turn off default that changes all categories for the same payee?

I get a lot of charges from Amazon, but they go into different categories - food/shopping/gifts/etc. Every time I update a category, the DEFAULT on Simplify is to change ALL Amazon purchases to the new category. I have to turn off that default every single time. Is there a way to have that check box NOT default? Right now, I can spend time changing 30 Amazon purchases, forget to uncheck that box, and it will overwrite every change I've made with the wrong category. I feel like the website default should not be to overwrite changes I have made. You should need to ask the website to do that.
